Preheat properly If you’re going to get a good crust on your food and that BBQ flavour, you need your BBQ to be hot before you start cooking.
Don’t poke BBQ's take time. Only turn steaks or burgers once or twice. And definitely don’t squash everything down as this forces the juices to run out and leaves the meat dry. Sausages are also best left alone – piercing the skins dries them out.
Remember food hygiene Even though BBQ's are out doors and the hunter gatherer instinct will keep in remember to keep it clean. Do not mix raw and cooked food, check temperature of your food and make sure to wash your hands.
Give it a rest Let cooked meat rest on a clean plate, cover with foil, for about 10 minutes before carving so juices can redistribute evenly.
